| | Launched during the sailing
competition « Transat Québec
St-Malo » of 1992, this extra-blonde
beer caresses you with its amazing softness. The power of this ale resides
in its various influences: English, Belgium and Austrian malts, German and American
hops as well as English yeasts. The savant balance of the Transat soothes you
despite its lightness. Who said blondes were faded? ***

| | Since its creation during our
first year of existence, this light perfumed coriander wheat keeps addicting our
clients. This best selling beer is inspired by Belgium except for one thing:
instead of using citrus during the brewing process, as the tradition requires,
we chose to serve this beer on lees with a piece of lime in order to give to this
« party pooper » the freshness it deserves. ***

| | In December 1990 was born a
superbly shimmering red: a sparkling English Lady. Since this beer is so balanced,
the master brewer claimed: « My goodness, this is not a two of spades! »
We then decided to name it the « Three of Spades » for it had been
created during our 3 rd anniversary. Brewed with the purest tradition from
malted barley, this red is dominated by caramel malt. It is subtly hopped in order
to bring out all of its richness; a real pleasure to taste. ***

| | First of our seasonal beers,
following a special request from the museum of Civilization, it has been created
in 1992 in order to open an exhibition on Ancient Viking civilization which had
its peak between 800 and 1000 AC. Following an historical research carried out
with the museum and the Suede embassy, we created this recipe combining barley,
wheat, honey and cranberries to produce this nectar drunk, one thousand years
ago, by Eric the Red, Leif Eriksson and even Hagar the Horrible. To add
more pleasure to the tasting of this beer, we serve it with fresh cranberries.

| | First official creation of
our brewer Jean Lampron, the CreaminAle transcends beautifully the traditional
and fore seeking personality of this beer lover. Although it has a charming amber
color, it is traditional because of its bitter taste and its English cream ale
style, and fore seeking because opposite of English beers, it is served on lees
like Belgium wheat beers. Not like others, creamy like it shouldn't be
allowed, tackling all traditions, it brings out to whom who tastes it, some secret
inhibitions… will it lead you to crime? Passionate crime or serial CreaminAle?
In order to know, you have to come back on the site of the crime… ***
Available from May to mid-June.

| | In Europe during the middle-age
era, hop was one of many condiments used to perfume and add bitterness to beers.
Local plants were used as well as spices coming from continents like Africa or
Asia . It is in this state of mind, inspired by rare ancient texts, with
little information, that we created the Kermesse, during the medieval festivities
of 1995. Even then, recipes were kept secret. Other than barley and wheat,
we added cardamom, orange bock and coriander, which make this beer tasty, summery
and ideal for celebrations. **
Available from Saint-Jean-Baptiste until harvest
time. |

| | Every fall, since 1992, she
is back from Basse-Côte-Nord with her aromas of honey, cloud berries, and
Labrador tea. Her name comes from the cloud berry traditionally picked by a tribe
of native people called «Montagnais», established on the north coast
of the Saint-Laurence River . This little fruit is issued from the same family
as the blackberry or the raspberry. Labrador tea, infused like usual tea by the
Montagnais, is used instead of hop in order to add bitterness to the beer. The
Montagnaise is an original beer, one of our creation we are proud the most.

roasted barley expresses itself without restriction supported and emphasized by
the presence of malt's residual sugar. An Irish inspired hopping completes its
composition. Served with the purest tradition of cream ales, with dense and creamy
foam, it is everything but a light beer; a beer for connoisseurs of strong tastes,
a beer which makes you forget the harshness of winter. ***
